Ingredients for 2 servings:

  • 400 g liver(s), shredded (possibly also veal liver)
  • Clarified butter
  • 2 cloves garlic
  • 1 large onion(s)
  • Herbs
  • Flour, for dusting
  • ½ liter meat broth
  • 1 tbsp white vinegar
  • pepper
  • Paprika powder, sweet
  • nutmeg
  • 2 bay leaves
  • 4 juniper berries, crushed
  • Salt
  • Parsley

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Brown the liver in clarified butter. Finely chop the garlic and herbs and add to the liver. Slice the onion into half rings and add to the liver. Dust the whole thing with flour and stir until lightly browned. Cover with meat broth, add vinegar, spices, bay leaves, and juniper berries. Simmer over medium heat. Season with salt and sprinkle with chopped parsley before serving. Serve with fried potatoes and a mixed salad.
