Spaghetti – Mortadella Salad

Ingredients for 4 servings:

  • 3 eggs, hard-boiled
  • 250g spaghetti
  • 150 g sausage (mortadella), cut into strips
  • 150 g cheese, Gouda, medium-aged, cut into strips
  • 2 gherkins, cut into strips
  • 400 g tomatoes
  • ½ bunch of dill
  • ½ bunch chives
  • ½ bunch parsley
  • 100 g mayonnaise
  • 125 g sour cream
  • 2 tbsp vinegar (herb vinegar)
  • Salt
  • Pepper, white

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes

Break the spaghetti into small pieces and cook until tender, drain, and rinse with cold water. Drain. Blanch the tomatoes and peel them, removing the stems. Cut the tomatoes and peeled eggs into eighths. Combine the pasta, sausage, cheese, cucumbers, tomatoes, and eggs in a bowl. For the marinade, chop the herbs. Mix the mayonnaise with the sour cream, add the herbs and vinegar, and season with salt and pepper. Pour over the salad ingredients, mix gently, and let it marinate for 1 hour.
