Liver with sour apples and onions

Remove any fat, tendons, and membranes from the liver and coat in flour. Season with pepper. Slice the apple and onion. Fry the liver in butter for 1-2 minutes on each side. Remove from the pan and keep warm in the oven at approximately 100°C (212°F). Sauté the apples and onions in the same pan. Add a little more butter and sugar to caramelize, if desired. Season the liver with salt and serve with the apples and onions. This dish is delicious with mashed potatoes, for example.
