Sourdough spice bread

Ingredients for 1 servings:

  • 400 g rye flour, 1150
  • 300 g wheat flour, 1050
  • 1 tbsp salt
  • 1 tbsp bread spice mix
  • 30 g yeast
  • 150 g sourdough
  • 400 ml water, lukewarm

Instructions

Working time approx. 20 minutes; Rest time approx. 2 hours 30 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 3 hours 40 minutes

Combine both types of flour in a bowl. Sprinkle with salt and bread spice. Dissolve the yeast in the warm water and add it to the flour along with the sourdough. Knead everything into a smooth dough, then let it rest for 2 hours. Knead the dough again and place it on a baking sheet lined with baking paper. Cover and let it rise for another 30 minutes. Preheat the oven to 220°C and bake for about 10 minutes. Reduce the oven to 200°C and bake the bread for about 35-45 minutes.
