Ingredients for 4 servings:
- 6 rolls, stale, sliced or 250 g dumpling bread
- 125 ml milk
- 20 g butter
- 1 large onion(s)
- 1 bunch parsley, flat
- 1 pinch(s) of salt and pepper
- nutmeg
- 2 eggs
- 2 tbsp flour
- 150 g smoked belly, diced
- 150 g mountain cheese or similar cheese, diced
- 20 g butter for frying
- 1 clove(s) garlic
- salt water
Instructions
Working time approx. 35 minutes; Cooking/baking time approx. 12 minutes; Total time approx. 47 minutes
Whisk the milk with the eggs and spices and pour over the dumpling bread. Mix well. Sauté the onions with garlic and parsley in the butter. Then add to the main mixture. Brown the pork belly in a little butter and add to the mixture. Mix the diced cheese into the mixture and then add the breadcrumbs. Shape the dumplings as desired and let them simmer in salted, boiling water. It’s important that the water doesn’t boil, so the dumplings keep their shape. Cook for 8-12 minutes, depending on the size. Garnish with herb butter and grated cheese, if desired.
