South Tyrolean Schüttelbrot salad with bacon

Ingredients for 4 servings:

  • 1 head of lettuce
  • 1 bunch of spring onions
  • 250 g cherry tomatoes
  • 100 g bread(s) (South Tyrolean Schüttelbrot)
  • 150 g bacon, South Tyrolean, in thin slices
  • 3 tbsp white wine vinegar
  • 1 tsp mustard, medium hot
  • Sugar
  • Salt and pepper, white
  • 4 tbsp oil
  • 1 bunch of thyme

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Trim and wash the lettuce, drain well, and tear into bite-sized pieces. Trim and wash the spring onions and slice into rings. Wash, trim, and halve the tomatoes. Break the bread into bite-sized pieces. Cut the bacon into strips. For the vinaigrette, whisk together the vinegar, mustard, sugar, salt, and pepper. Stir in the oil in a thin stream. Wash the thyme and shake dry, setting some aside for garnish. Finely chop the rest and stir into the vinaigrette. Mix the salad ingredients and drizzle with the vinaigrette. Garnish with the reserved thyme.
