Ingredients for 4 servings:
- 400 g lamb’s lettuce
- 2 apples
- 2 onions
- 2 cloves garlic
- 2 onions, red
- 2 tsp white wine vinegar
- 150 ml olive oil
- 1 bunch chives (also frozen)
- 100 g ham, (Katenschinken), diced
- 500 g cherry tomatoes (approx. 4-5 cm diameter)
- some water
- salt and pepper

Delicious and light starter that will melt any palate, quickly made
First, wash the lamb’s lettuce, spin it dry, and arrange it along the edges of 4 large, flat dinner plates. Now wash the tomatoes, remove the stems, cut them into thin slices, and place them back on the plates. Cut the onions into eighths and puree them together with the garlic, salt, pepper, 5 tablespoons of olive oil, and chives. Wash, core, and thinly slice the apples. Meanwhile, fry the ham cubes in 1 tablespoon of olive oil together with the finely chopped red onion in a small saucepan. Add the vinegar and 2 tablespoons of the puree and let the apples simmer for about 5 minutes over medium heat, carefully turning them over. Once the time has elapsed, pick out the prettiest slices and arrange them on the plates. Puree the rest of the mixture in the pan again and add it to the remaining puree. Add the rest of the olive oil and a little water to create a nice sauce (that can be poured). Pour this over the salad plates just before serving.
