South Tyrolean spinach pasta

Ingredients for 2 servings:

  • 300 g pasta of your choice
  • salt water
  • 300 g leaf spinach, frozen or 600 g fresh spinach
  • 2 large onions
  • 1 clove(s) garlic
  • 100 g ricotta
  • 60 g Parmesan
  • 2 tbsp, heaped chives, finely chopped
  • nutmeg
  • salt and pepper
  • 100 ml cream

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Spinach sauce

Cook the pasta in salted water according to the package instructions. Meanwhile, finely chop the spinach, sauté the onion and garlic in the butter, add the spinach, and let cool slightly. Add the ricotta, Parmesan, and chives, season with nutmeg, salt, and pepper, and mix well. Add the cream and heat everything back up. Add the pasta to the sauce, mix, and then serve. Tip: If you omit the cream, the sauce is perfect for filling ravioli.
