Ingredients for 4 servings:
- 500 g minced meat, beef or half and half
- 1 large onion(s)
- 200 g mushrooms
- 1 large zucchini
- 1 eggplant(s)
- 3 beefsteak tomatoes
- 1 red bell pepper(s)
- salt and pepper
- Paprika powder, sweet
- Herbs of Provence
- 2 cloves garlic
- 2 tbsp olive oil
- 1 pt. Tomato(s), pureed
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Peel and dice the onion, and sauté it gently in the oil. Then add the minced meat and fry it lightly. Now add the finely chopped garlic cloves so they don’t overbrown. Now add the bell pepper, zucchini, eggplant, beefsteak tomatoes, and mushrooms, all diced, one after the other, at a time. Season to taste with salt, pepper, paprika, and Provençal herbs. Finally, top up with the passata and simmer for about 10 minutes longer. Serve with baguette or rice. Tip: If you like it a bit spicier, you can add instant broth, e.g., from a health food store.
