Ingredients for 2 servings:

  • 500 g pork salmon
  • ½ tbsp oregano
  • 1 clove(s) garlic
  • ½ lemon(s), juice
  • 2 ½ tbsp olive oil
  • ½ tsp salt
  • ½ tsp pepper

Instructions

Working time approx. 15 minutes; Rest time approx. 12 hours; Cooking/baking time approx. 15 minutes; Total time approx. 12 hours 30 minutes

Cut the meat into 1.5 to 2 cm thick slices. Cut these slices into (preferably) equal-sized pieces, each about 4 to 5 cm long. Combine the olive oil and lemon juice. Add the salt, pepper, and oregano. Press in the garlic and mix everything together. Marinate the meat in the oil, cover, and refrigerate for at least two hours. Once removed, let it come to room temperature for about an hour. Thread the meat onto skewers (for example, if you have 6 skewers and 900 g of meat, that should be around 150 g per skewer). Grill on the grill over direct heat at 250 °C for three to four minutes on each side. Serve the souvlaki skewers with Greek coleslaw, pita, and tzatziki.
