Ingredients for 4 servings:

  • 300 g flour (type 405)
  • 5 eggs
  • some salt
  • some nutmeg
  • 25 g butter
  • 7 tbsp milk
  • Water (salt water)
  • possibly herbs
  • possibly cheese

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Noodle specialty from Swabia

Put the flour in a bowl. Add the eggs, milk, and a pinch of salt and beat vigorously with a wooden spatula until a dough forms. When the dough is smooth, continue beating until it forms small bubbles. Bring the salted water to a boil in a saucepan and scrape thin strips of dough from a wooden board (use a spaetzle press if you have one) into the boiling water. When the spaetzle float to the top, remove them with a slotted spoon. Then lightly brown them in butter. If you like, add a little nutmeg. A quick tip: Add freshly chopped herbs or cheese to the dough.
