Spaetzle with Lentils

The perfect spaetzle with lentils recipe with a picture and simple step-by-step instructions.

  • 150 g Smoked tofu
  • 2 Carrots
  • 1 Leek
  • 1 Onion
  • 200 g Lentils red
  • 1 Can Chopped tomatoes
  • 800 ml Vegetable broth
  • 4 tbsp Tomato paste
  • 4 tbsp Balsamic vinegar
  • 0,25 bunch Fresh smooth parsley
  • 4 Branches Fresh thyme
  • 1 pinch Sugar
  • 200 g Spaetzle
  1. Dice the carrots. Cut the leek in a cross shape and then dice. Dice the onion. Dice the smoked tofu. Finely chop the herbs.
  1. First fry the tofu in oil until golden brown, then add onions, leek, carrots and fry for approx. 5 minutes.
  1. Stir in tomato paste and sweat. Add the balsamic vinegar, pour the broth, add the lentils and tomatoes. Let simmer for 20 minutes. Cook spaetzle in the meantime.
  1. Add the herbs to the sauce and add a pinch of sugar to taste.
