Spaetzle with Lentils
The perfect spaetzle with lentils recipe with a picture and simple step-by-step instructions.
- 150 g Smoked tofu
- 2 Carrots
- 1 Leek
- 1 Onion
- 200 g Lentils red
- 1 Can Chopped tomatoes
- 800 ml Vegetable broth
- 4 tbsp Tomato paste
- 4 tbsp Balsamic vinegar
- 0,25 bunch Fresh smooth parsley
- 4 Branches Fresh thyme
- 1 pinch Sugar
- 200 g Spaetzle
- Dice the carrots. Cut the leek in a cross shape and then dice. Dice the onion. Dice the smoked tofu. Finely chop the herbs.
- First fry the tofu in oil until golden brown, then add onions, leek, carrots and fry for approx. 5 minutes.
- Stir in tomato paste and sweat. Add the balsamic vinegar, pour the broth, add the lentils and tomatoes. Let simmer for 20 minutes. Cook spaetzle in the meantime.
- Add the herbs to the sauce and add a pinch of sugar to taste.
