Spaghetti in cream cheese and spinach sauce

Ingredients for 4 servings:

  • 400g spaghetti
  • 2 tbsp oil
  • 1 large onion(s)
  • 2 cloves garlic, finely chopped
  • 20 g dried tomatoes, finely chopped
  • 250 ml vegetable stock
  • 2 packages of frozen spinach
  • 150 g cream cheese with herbs
  • salt and pepper
  • Paprika powder
  • chili powder

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Cheap, simple and delicious

Cook the spaghetti according to the instructions and rinse well. Heat 2 tablespoons of oil in a saucepan, sauté the finely chopped onion, garlic, and sun-dried tomatoes. Deglaze with 250ml vegetable stock and add the frozen spinach. Simmer over medium heat. Finally, add the 150g cream cheese and let it simmer for a few minutes, stirring constantly. Season to taste with salt, pepper, paprika, and a pinch of chili powder. Transfer the cooked spaghetti to a glass bowl, pour over the spinach sauce, mix well, and serve!
