Ingredients for 4 servings:

  • 500g spaghetti
  • 50 ml olive oil, of good quality
  • 4 cloves garlic
  • 2 cans of sardines in oil
  • 200 ml dry white wine
  • ½ tsp chili flakes, or a little more if necessary
  • 1 tsp oregano
  • 1 dashes lemon juice
  • e.g. salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Cook the spaghetti according to the package instructions. Meanwhile, heat the olive oil and sauté the chopped garlic. Drain the sardines, add them, and sauté briefly. Season with chili and oregano. Deglaze with the white wine and a squeeze of lemon juice. Simmer for 2-3 minutes, then season with salt and pepper to taste. Mix the sauce with the drained spaghetti. A fresh salad helps against scurvy, and a glass of white wine helps against homesickness.
