Spaghetti 'Provence'

Ingredients for 4 servings:

  • 200 g dried meat, roughly diced
  • 4 bell peppers, red, yellow, green, cut into large pieces
  • 4 large beef tomatoes, quartered
  • 1 clove(s) garlic, chopped
  • 1 tbsp dried herbs of Provence
  • 500g spaghetti
  • oil
  • pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Family recipe

Fry the dried beef in 1 tablespoon of oil in a large pot until crispy. Discard any fat. Add the diced bell peppers and garlic to the dried beef, stir to loosen any browned meat juices, and simmer with the lid on for 10-15 minutes until soft, stirring occasionally. Add the tomato quarters and Provençal herbs (amount to taste) and simmer for about 4 more minutes (it should still have a bite). Season with pepper. Pour over the spaghetti cooked al dente.
