Spaghetti Provolone

Ingredients for 2 servings:

  • 150 g arugula
  • 1 onion(s), red
  • 2 cloves garlic
  • 2 red chili peppers
  • 250 g pasta (spaghetti)
  • Salt
  • 4 tbsp olive oil, cold-pressed
  • 75 g cheese (Provolone)
  • Black pepper, freshly ground

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Wash the arugula, toss dry, and cut the leaves into bite-sized pieces. Peel the onion and garlic, slice the onion into thin rings, and crush the garlic. Finely slice the chili peppers. Cook the spaghetti in salted water until al dente and drain. Heat the oil in a pan and sauté the onion, garlic, and chili one at a time, stirring occasionally. Remove the pan from the heat, add the arugula leaves and spaghetti, toss to combine, and season with salt and pepper. Serve the pasta sprinkled with provolone and the remaining arugula leaves.
