Spaghetti salad with chanterelles

Ingredients for 4 servings:

  • 250 g spaghetti, possibly whole wheat spaghetti
  • 500 g cherry tomatoes
  • 1 small chili pepper(s)
  • 300 g chanterelles
  • 1 m.-large zucchini
  • 2 spring onions
  • 1 garlic clove(s)
  • 2 tbsp olive oil
  • 1 ball of mozzarella (buffalo mozzarella)
  • 2 tbsp Balsamic vinegar Bianco
  • 1 handful of basil
  • salt and pepper

Instructions

Working time approx. 35 minutes; Total time approx. 35 minutes

Cook the spaghetti al dente. Halve the tomatoes and sprinkle with salt. Finely chop the chili pepper. Clean and slice the chanterelles. Halve the zucchini horizontally and slice, slice the spring onions, and press the garlic clove through a press. Sauté the above ingredients, except the cherry tomatoes, in 1 tablespoon of olive oil over medium heat for 5 minutes. Meanwhile, dice the mozzarella. Add the spaghetti to a bowl with the vegetables, mushrooms, tomatoes, and mozzarella, and season with the remaining ingredients.
