Spaghetti salad with leek and mandarins

Ingredients for 6 servings:

  • 250 g pasta (spaghetti)
  • 1 can/n tangerine(s)
  • 1 stalk(s) leek
  • 300 g peas, frozen
  • 30 g butter
  • 500 g ham, cooked
  • 1 tsp mustard
  • 3 tbsp mayonnaise
  • 150 g yogurt
  • lemon(s)
  • Salt
  • pepper
  • 125 g peanuts, salted

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes

Cook the spaghetti. Slice the leek into rings and sauté with the peas in hot fat. Drain the mandarin oranges, reserving the juice, and slice the ham into strips. Make a dressing with mayo, yogurt, mustard, salt, pepper, lemon juice, and 3-4 tablespoons of mandarin orange juice. Mix all ingredients, stirring in the mandarin oranges last. Chill the salad for 1 hour.
