Spaghetti with cod sauce

Ingredients for 2 servings:

  • 250g spaghetti
  • 300 g fish fillet(s) (cod)
  • 1 small onion(s)
  • 200 ml vegetable stock
  • 200 ml milk
  • 4 tbsp tomato paste
  • some salt
  • little sugar
  • possibly parsley or other herbs as required
  • some sauce thickener

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Bring a pot of water to a boil and cook the spaghetti with a little salt according to the package instructions until al dente. Drain and rinse thoroughly. For the sauce, peel and finely chop a small onion and fry. Deglaze with the vegetable stock and add the milk. Add the tomato paste and whisk to combine. Bring to a boil and thicken with a sauce thickener if desired. Stop simmering the sauce. Cut the fish fillet into pieces and let it simmer. Season with salt and a little sugar, and add herbs if desired. Arrange on plates with the spaghetti and serve.
