Spaghetti with mussels

Ingredients for 4 servings:

  • 1 kg mussels
  • 125 ml olive oil
  • 4 garlic cloves
  • 1 kg tomatoes
  • Salt
  • pepper
  • 3 tbsp parsley, chopped
  • 600g spaghetti

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Wash the mussels. Heat 3 tablespoons of olive oil in a pan. Add the mussels. Heat in a covered pan until the mussels open. Remove the mussel meat with a sharp knife, reserving the mussel juice. Heat the remaining olive oil in a saucepan. Add the crushed garlic cloves. Add the mussel juice and the meat. Let it all simmer slightly. Add the peeled, chopped tomatoes, salt, and pepper. Cook for about 10 minutes. Stir in the parsley. Toss the al dente, well-drained pasta with half of the sauce. Serve with the rest of the sauce.
