Spaghetti with shrimp

Ingredients for 2 servings:

  • 120g spaghetti
  • salt and pepper
  • 2 shallots
  • 2 garlic cloves
  • 2 tsp vegetable oil
  • 10 shrimp, ready to cook (60 g)
  • ½ tsp lemon juice
  • 50 ml vegetable stock
  • 4 tbsp sour cream
  • 1 tsp curry powder
  • ½ tsp sambal oelek
  • 1 tsp sugar
  • 200 g cherry tomatoes
  • 1 sprig(s) of thyme

Working time approx. 5 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 20 minutes

Cook the spaghetti in salted water according to the package instructions until al dente. Drizzle the prawns with lemon juice and season with salt and pepper. Finely dice the shallots and garlic cloves. Heat the oil in a pan and sauté the shallots and garlic. Add the prawns and thyme leaves, fry for about 4 minutes, then remove the prawns. Pour in the stock, stir in the sour cream, simmer for about 5 minutes, and season with salt, pepper, curry powder, sambal oelek, and sugar. Halve the cherry tomatoes, add them to the sauce with the prawns, and heat briefly again. Mix the spaghetti with the sauce and serve.
