Spaghetti with snow peas and dried tomatoes

Ingredients for 4 servings:

  • 500g spaghetti
  • 250 g sugar snap peas
  • 250 g cherry tomatoes
  • 250 g tomatoes, dried
  • 2 cloves garlic
  • 1 onion(s), red
  • 50 g pine nuts
  • 3 tbsp olive oil
  • salt and pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Clean the snow peas and blanch them in boiling water. Then cook the pasta in the boiling water until tender. In the meantime, toast the pine nuts and let them cool. Peel and dice the onions and garlic, and sauté them in a pan with the olive oil. Slice the snow peas into horizontal strips and add them to the pan. Quarter the cherry tomatoes and add the sliced, sun-dried tomatoes to the pan. Toss everything well. Season with salt and pepper. Add the spaghetti directly from the pot to the pan. Toss everything again and add the toasted pine nuts.
