Spaghetti with the Devil

Ingredients for 4 servings:

  • 4 garlic cloves
  • 2 tbsp butter
  • 2 tbsp olive oil
  • 2 tsp chili flakes (pulbiber or dried chili)
  • 500 ml tomato(s), pureed
  • 3 tbsp Paprika -Salca (Turkish supermarket)
  • 3 tbsp tomato paste
  • 1 tbsp honey
  • 1 tsp salt
  • Pepper, freshly ground
  • some anchovy paste, to taste
  • 500 g spaghetti, or other pasta of your choice
  • Parmesan, freshly grated

Working time approx. 15 minutes; Total time approx. 15 minutes

Pasta dish with spicy tomato sauce

Gently sauté the finely diced garlic in the fat. It shouldn’t get too brown, or it will become bitter; the main thing is to let the garlic impart its flavor to the fat. Then add the tomato paste, honey, and pul biber, along with the passata and salca. Mix well, season to taste, and simmer for about 10 minutes. Meanwhile, cook the spaghetti or pasta al dente, if desired, and toss with the seasoned sauce or serve separately with freshly grated Parmesan cheese.
