Spaghetti with tomato vodka sauce

Ingredients for 4 servings:

  • 50 g butter
  • 1 peperoncini, fresh (or dried)
  • 3 tbsp tomato paste
  • 200 g cream
  • 4 cl vodka
  • 1 pinch(s) of sugar
  • 50 g Parmesan, fresh, grated
  • 400 g pasta (spaghetti)

Working time approx. 15 minutes; Total time approx. 15 minutes

Prepare the spaghetti according to the package instructions. Meanwhile, melt the butter and chili peppers in a deep pan. Mix the tomato paste with a little warm water and heat in the pan. Pour in the cream and, once boiling, stir in the vodka and sugar. Discard the fresh chili peppers, leaving the dried ones in the sauce. Stir in the grated Parmesan cheese until the sauce is nice and creamy. If the pasta isn’t al dente, set the sauce aside. To serve: Toss the al dente pasta with the sauce in the pan and serve immediately!
