Spaghetti with tomatoes and arugula

Ingredients for 3 servings:

  • 400g spaghetti
  • 1 shallot(s), cut into fine strips
  • 2 garlic cloves, finely chopped
  • 150 g cherry tomatoes, quartered
  • 1 bowl of arugula, cleaned
  • salt and pepper
  • Cheese (Pecorino), grated
  • chili
  • oregano
  • some water

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Cook the spaghetti as usual. Sauté the shallot and garlic in a pan. Add the chopped tomatoes and pour in a little water. Simmer for about 15 minutes. Season with spices and oregano. Toss the cooked spaghetti with the sauce and stir in the cleaned arugula. Sprinkle with grated cheese and serve immediately.
