Spaghetti with tomatoes and olives

Ingredients for 2 servings:

  • 2 servings of pasta (spaghetti)
  • 2 cloves garlic
  • 60 g butter
  • 4 tbsp olive oil
  • 3 tomatoes, fresh (vine)
  • 1 jar black olives (pitted)
  • 1 ball(s) of mozzarella
  • 3 sprigs basil, fresh
  • Pepper (freshly ground)

Working time approx. 20 minutes; Total time approx. 20 minutes

Quick and easy! Perfect for using up leftovers!

Cook the spaghetti until al dente. Finely chop or press the garlic and sauté it in a pan with the oil and butter. Dice the tomatoes and add them to the pan with the olives. Add the cooked spaghetti and mix everything well. Dice the mozzarella and mix it into the pasta. Toss everything in the pan until the cheese has melted. Grind pepper over it and garnish with basil. Serve immediately! Super delicious and super quick, because you can also make it with pasta from the day before. Another variation: Instead of fresh tomatoes, you can also use sun-dried tomatoes!
