Ingredients for 2 servings:
- 1 egg(s)
- 300 ml milk
- 150 g flour
- ½ tsp, leveled baking powder
- ½ small onion(s)
- pepper, black
- Paprika powder
- possibly Aromat / Fondor etc.
- 250 g mushrooms, fresh
- 150 g smoked belly
- ½ onion(s)
- Salt
- 1 tomato(s), (optional)
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
In a bowl, mix the egg, milk, flour, and baking powder into a batter. Add flour or milk for desired consistency. Season to taste. Finely dice half an onion and stir into the batter. If you like, you can also add a little Fondor, etc. You can also replace some of the milk with cream and water (2/3 cream + 1/3 water). This will make the batter fluffier, but it will also have more calories. Fill a ladle about 2/3 full with batter and fry on both sides in a heated 26-28cm pan (spread the batter evenly in the pan!) with a little oil. Heat the finished pancakes until hot. Wash the mushrooms and thinly slice them. Dice the remaining half an onion and the bacon. Fry everything together in a heated pan until the mushrooms turn slightly golden yellow. Add a little more seasoning if desired; it depends on the smoked bacon! Now fill the pancakes about 1/3 full with the filling and form a triangular pocket. If you like, you can also add a few diced tomatoes to your pancakes. Enjoy! Tip: Instead of fresh onions, you can also add fried onions to the batter.
