Spanish-inspired tomato salad

Ingredients for 2 servings:

  • 4 tomatoes
  • 6 anchovies
  • 2 tsp, heaped capers
  • 10 olives, dry-pickled, with herbs
  • 1 piece(s) of cheese (Manchego), alternatively Peccorino
  • some olive oil
  • pepper

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Wash and slice the tomatoes. Slice the olives. Serve together, garnish with capers and arrange the anchovies in ribbons on top. Drizzle with a little olive oil and season with pepper. (Don’t add salt! The olives and anchovies provide enough salt.) Grate cheese coarsely if desired and sprinkle over the top.
