Ingredients for 1 servings:

  • 1 ½ kg apples, grated
  • 500 g sugar
  • ⅛ liter rum
  • 1 tbsp cinnamon powder
  • 2 tbsp cocoa powder
  • 2 pinches of cloves
  • 1 pinch of pepper
  • 300 g hazelnuts, whole kernels
  • 200 g fig(s), dried, sliced, stem removed
  • 300 g raisins
  • 50 g candied orange peel
  • 50 g candied lemon peel
  • some lemon peel (a few pieces), untreated, cut
  • 1 kg flour
  • 2 packets of baking powder
  • 10 ml rose water
  • possibly dried fruits of your choice
  • possibly grease for the molds

Instructions

Working time approx. 45 minutes; Rest period approx. 1 day; Cooking/baking time approx. 1 hour 30 minutes; Total time approx. 1 day 2 hours 15 minutes

Christmas baking

Mix all ingredients except the flour and baking powder thoroughly and let stand in a cool place for 24 hours. If desired, you can add more dried fruit. Then add the flour and baking powder to the mixture. Pour the batter into greased loaf pans or form small loaves. Bake at approximately 190–200°C (top/bottom heat, fan oven: approximately 170–180°C) for approximately 1 1/2 hours. Cover slightly towards the end of the baking time if desired. Sliced ​​and spread with butter, the bread tastes even better days later!
