Spare ribs with homemade BBQ sauce

Ingredients for 3 servings:

  • 1 m.-sized onion(s)
  • 1 lemon(s)
  • 3 garlic cloves
  • 100 g sugar, brown
  • 1 cup ketchup
  • 3 tbsp Worcestershire sauce
  • 1 tbsp red wine vinegar
  • 2 tsp paprika powder
  • 1 tsp chili flakes
  • 1 tsp, heaped mustard
  • 1 tsp smoked salt
  • 1 tsp soy sauce
  • 1 kg ribs
  • Clarified butter or olive oil

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 20 minutes

Delicious pork!

BBQ sauce: Finely chop the onion and sauté in clarified butter or olive oil for 5 minutes until lightly browned, adding the garlic during the last minute. Meanwhile, mix together the ketchup, Worcestershire sauce, sugar, mustard, and lemon juice. Deglaze the onion and garlic with the red wine vinegar and add the ketchup mixture. Add paprika, chili flakes, and smoked salt. Simmer gently for 10 minutes. Season to taste with soy sauce, salt, pepper, and smoked salt, if desired. Spare ribs: Generously coat the spare ribs with the BBQ sauce. In the meantime, preheat the oven to 180°C (fan oven). Place the spare ribs on the bottom rack and cook at 180°C (fan oven) for 60 minutes using the fan grill function. Brush the top side with BBQ sauce approximately every 20 minutes. The spare ribs are cooked when you can easily pierce the meat with a toothpick.
