Spare ribs with honey glaze

Ingredients for 4 servings:

  • 1.2 kg spare ribs, cut into pieces
  • pepper
  • Paprika powder
  • marjoram
  • 5 tbsp oil
  • 2 cloves garlic
  • Salt
  • 1 chili pepper(s), dried
  • 3 tbsp tomato ketchup
  • 3 tbsp oil (olive oil)
  • 3 tbsp honey
  • 3 tbsp sherry or brandy

Cut the spare ribs into pieces, rinse, and pat dry. Season with pepper, paprika, and marjoram, and brush with oil. Place on a baking sheet lined with aluminum foil and roast at 200 degrees Celsius for about 35 minutes. In the meantime, grind the peeled garlic with salt into a paste. Add the finely chopped chili pepper. Stir in the tomato ketchup, oil, and honey. Season with sherry. If desired, add more paprika and pepper. After about 20 minutes of roasting, spread the ketchup and honey mixture over the spare ribs and finish roasting. Baked potatoes with herb quark or French fries make excellent side dishes.
