Sparkling cucumber-lemon lemonade

Ingredients for 8 servings:

  • 4 stalks of lemongrass
  • ½ liter of water
  • 250 g sugar
  • 1 kg cucumber(s)
  • 5 lemons
  • ice cubes
  • mineral water

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 5 minutes; Total time approx. 1 hour 20 minutes

Blast the lemongrass with the back of a knife and cut into pieces. Bring to a boil with half a liter of water and the sugar and continue to simmer over low heat for about 5 minutes. Allow to cool. Pat the washed cucumbers dry and roughly dice them. Finely chop the cucumber cubes in a blender and pass through a fine sieve. Halve 4 lemons and squeeze the juices. Mix about 200 ml of lemon juice with the cucumber water. Strain the lemongrass syrup. Add the cucumber water and chill for one hour. Pour some cucumber syrup into glasses and fill with mineral water and ice cubes. If desired, wash the remaining lemon in hot water, dry it, halve it lengthwise, and slice it crosswise. Serve the syrup with lemon slices.
