Spätzle pan with green asparagus

Ingredients for 4 servings:

  • 250 g asparagus, green
  • 500 g spaetzle, fresh or from the refrigerated section
  • 250 g bacon cubes
  • 1 garlic clove(s)
  • 2 tbsp, heaped parsley, frozen
  • 1 lemon(s), organic
  • 3 tbsp olive oil
  • 1 ball of mozzarella
  • salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Wash the asparagus and trim the ends. Cut the stalks into bite-sized pieces. Fry the bacon cubes in a pan without adding any fat until crispy. Peel and finely chop the garlic. Wash and zest the lemon in hot water. Place the bacon in a bowl and mix well with the garlic, 2 tablespoons of olive oil, lemon zest, and parsley. Fry the asparagus in the same pan with 1 tablespoon of olive oil for about 6-8 minutes. Add the spaetzle and fry for another 5 minutes. Tear the mozzarella and mix in. Then fry everything for another 2 minutes and season with salt and pepper. Transfer the asparagus and spaetzle pan to the plates and serve with the bacon cube mixture. If serving four, one serving has 400 kcal.
