Spätzle salad with apple, celery, cucumber bites and egg

Ingredients for 3 servings:

  • 250 g spaetzle
  • 1 apple, red
  • 1 jar celery salad, approx. 370 ml
  • 1 jar of gherkins (Silesian gherkins), approx. 360 ml
  • 4 eggs, hard-boiled
  • 4 tbsp vegetable oil
  • 200 g herb curd
  • 250 ml salad cream (Miracle Whip Balance)
  • 1 pack of garden herbs, 8 g or fresh garden herbs

Instructions

Working time approx. 30 minutes; Rest time approx. 8 hours; Cooking/baking time approx. 15 minutes; Total time approx. 8 hours 45 minutes

Summer salad

Cook the spaetzle and let cool. Dice a red apple. Drain the celery salad. Drain and dice the Silesian cucumbers. Transfer everything to a salad bowl. For the dressing, stir the garden herbs into the oil, mix with the mayonnaise, and stir in the herb curd. Mix the dressing with the salad and garnish with the sliced ​​hard-boiled eggs. Let it marinate in the refrigerator overnight.
