Spätzle salad with ham and grapes

Ingredients for 4 servings:

  • 400 g spaetzle
  • Salt
  • 1 romaine lettuce
  • 200 g Black Forest ham, thinly sliced
  • 200 g grapes, seedless green
  • 2 onions, red, in rings
  • 6 tbsp oil (grape seed oil)
  • 6 tbsp oil (sunflower oil)
  • 4 tbsp vinegar (red wine vinegar)
  • Pepper, from the mill
  • 40 g pine nuts, roasted

Instructions

Working time approx. 35 minutes; Total time approx. 35 minutes

Cook the spaetzle in plenty of salted water, drain, and refresh. Tear the lettuce into leaves, wash, pat dry, and cut into 2 cm wide strips. Slice the ham diagonally into strips. Halve the grapes. Mix the spaetzle with the grapes, onions, lettuce, and ham strips. Mix the oil, vinegar, salt, and pepper to make a salad dressing and stir into the salad ingredients. Sprinkle with pine nuts.
