Spätzli – Leek Gratin

Ingredients for 4 servings:

  • 300 g spaetzle (spaetzli)
  • 400 g leek
  • 1 tbsp butter
  • Salt
  • black pepper, freshly ground
  • 150 g cheese (Gruyère or Emmental)
  • 1.8 dl cream

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Cook the spaetzle in boiling salted water until tender. Drain and rinse thoroughly with cold water to prevent sticking. Trim and wash the leek, then slice it into fine rings. Heat the butter in another pan. Sauté the leek for 3-4 minutes, stirring frequently. Season with salt and pepper. Mix the spaetzle and leek. Finely grate the cheese. Generously butter a gratin dish. Layer the spaetzle and leek mixture and cheese. Top with cheese. Drizzle the cream over the ingredients. Bake the spaetzle gratin at 200°C in a preheated oven on the second lowest rack for about 20-25 minutes. Serve with salad.
