for the ground

  • 200 g Butter
  • 200 g Sugar
  • 4 Eggs
  • 250 g Flour
  • 1 teaspoon Baking powder
  • 1 tbsp Cocoa powder
  • 1 teaspoon Speculoos seasoning
  • 1 tbsp Rum

for the filling

  • 0,25 l Water
  • 100 g Sugar
  • 1 packet Vanilla flavored pudding powder
  • 2 Egg yolk
  • 125 g Butter
  • 1 Orange – juice
  • 1 teaspoon Orange zest

for covering

  • 0,5 l Cream
  • 1 packet Vanilla sugar
  • 2 packet Cream stiffener
  • Spice speculoos according to tray size

  • 150 g Powdered sugar
  • 0,5 Orange – juice

  • Whipped cream
  • 1 Can Mandarin oranges
  1. Mix the butter, sugar and eggs together well. Mix the flour with baking powder, cocoa and baking powder and stir in together with the rum. Place the dough on a baking sheet lined with baking paper (approx. 25×40 cm) and smooth it out. Bake the tray in the oven at 160 ° C – fan-assisted – for approx. 18-20 minutes. Chopstick sample !!!! take the cake out of the oven and place a baking frame around it.
  2. While the bottom is in the oven, the cream is boiled. To do this, put the water with the pudding powder and sugar in a saucepan, stir until smooth and boil. When the mass becomes thick, remove the pan from the heat and let it cool slightly. Now stir in the egg yolks, butter and orange juice one after the other. Spread the warm cream on the floor and let it cool down completely.
  3. The cream layer is now placed on the cooled base. To do this, whip the cream with vanilla sugar and cream stiffener and spread it on the cream. Cover the cake completely with spiced speculoos.
  4. Mix the powdered sugar and orange juice so that a slightly thicker glaze is created (add a little more powdered sugar if necessary). Pour the topping on the speculoos and spread with a brush. Now the cake should soak for at least 1 night.
  5. Before serving, decorate the individual pieces of cake with a cream tuff and place 1 tangerine wedge on each.
