Dough:
- 500 g Spelled flour type 630
- 180 ml Milk
- 1 cube Yeast fresh
- 75 g Sugar
- 75 g Soft butter
- 1 pinch Salt
- 2 Eggs
Covering:
- 1200 g Apples
- 1 Lemon fruit juice
Streusel:
- 200 g Soft butter
- 120 g Sugar
- 1 Pck. Vanilla sugar
- 1 pinch Salt
- 1 Egg yolk
- 275 g Flour type 405

Dough:
- Sift the flour into a large bowl. Make a large depression in the middle. Sprinkle the sugar on the resulting edge. Crumble the yeast into the well. Warm the milk slightly and pour over it. Mix yeast with milk and dissolve. Stir in a little flour and sugar from the edge. Cover the bowl and let it rest for 15 minutes in a warm place. The yeast mixture must have been bubbling and more than doubled.
- Then add the butter, salt and eggs and knead everything until the dough shines and stands out from the bowl when you knead. Cover the bowl again and let rise for about 1 hour in a warm place (ideally in the oven at 50 ° without convection). It must have at least doubled its volume.
Covering:

Streusel:
- In the meantime, put all the ingredients for the crumble in a larger bowl. Coarsely whisk with the hand mixer. Then knead into a dough with your hands and then loosen it up again with the hand mixer to form large, coarse sprinkles. Provide.

- Preheat the oven to 200 ° (convection 180 °). Place the well-risen dough on a greased baking sheet with a higher edge and spread evenly on it with floured hands. Drain the apple wedges, drain well and cover the dough with them. Sprinkle everything with the cinnamon sugar and spread the thick crumble evenly over it. Bake cakes on the middle shelf for 20-25 minutes, not too dark. To test, lift the floor slightly with a knife. It should be light golden brown. Likewise the edges of the cake.
