Ingredients for 1 servings:
- 2 m.-sized eggs
- 200 g brown sugar
- 200 g butter or margarine
- 200 g almonds, ground
- 100 g oat flakes, fine
- 100 g spelt flour for dark pastries
- 2 bags of vanilla sugar
- 1 pinch of salt
- 2 tsp baking powder

Line 2 baking sheets with parchment paper and preheat the oven to 180°C (top/bottom heat). Place the eggs, sugar, vanilla sugar, salt, and butter or margarine in a mixing bowl. Beat with a hand mixer on high until creamy, then stir in the ground almonds. Add the oats and spelt flour to the mixture, sprinkle the baking powder over the flour, and mix well. Using 2 teaspoons, drop small heaps of the mixture onto 2 baking sheets, leaving some space between them to allow the dough to expand. Bake for approximately 15-18 minutes, then let cool. This dough makes approximately 2 trays of 40 cookies each.
