Spelt apple cake

Ingredients for 1 servings:

  • 800 g apples
  • 2 liters of water
  • 2 tbsp lemon juice
  • 250 g wholemeal spelt flour or spelt flour
  • ¾ pack of baking powder
  • 150 g sugar
  • 1 packet of vanilla sugar
  • 125 g butter
  • 4 eggs
  • 30 g dark chocolate, grated
  • 2 packs of cake glaze
  • Sugar, quantity see cake glaze packet
  • 500 ml apple juice or cider

Working time approx. 25 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 50 minutes

Mix the water with the lemon juice. Peel, quarter, core, and thinly slice the apples. Add the slices to the lemon water. Melt the butter and let it cool. I always do this in the microwave. Mix the flour with the baking powder. Mix the sugar with the vanilla sugar. Add the sugar to the butter and mix. Then add the eggs. Slowly add the flour, stirring constantly. At the very end, carefully fold in the chocolate shavings. Place the apple slices in a sieve and let them drain well. Spread the batter onto a baking sheet. Lightly press the apple slices into the batter. Preheat the oven to 200°C (top and bottom heat) or 180°C (fan). Bake the cake for about 25 minutes. It’s best to test for doneness with a toothpick: if nothing sticks to the toothpick, the cake is done. Remove the cake from the oven and let it cool completely. Prepare the glaze according to the instructions; the amount of sugar is on the package. Instead of water, use apple juice or cider. Spread the icing over the cake and let it set. Since the batter contains a lot of liquid ingredients, it can be made without a mixer. Simply use a whisk and muscle power. If you want even more chocolate, you can also add 1 tablespoon of cocoa powder to the batter.
