Ingredients for 1 servings:
- 350 g spelt flour, half wholemeal, half type 630
- 250 g low-fat curd cheese
- 1 egg(s)
- 2 tbsp apple cider vinegar
- 2 tbsp maple syrup
- 1 packet of baking powder
- some baking soda
- 1 m.-sized carrot(s)
- 1 handful of mixed nuts
- 2 tbsp oil
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 15 minutes
for a loaf pan
Finely chop the carrots and nuts in a good food processor. Mix the quark, egg, oil, vinegar, and syrup well with a spatula. Mix the flour, baking soda, and baking powder, and salt to taste, well, and add to the quark mixture. Mix with a spatula until the dough no longer sticks to your hands. Add a little more of the flour mixture if necessary. Shape the bread into a loaf with your hands and then press it into a loaf pan sprayed with non-stick spray. Place in a cold oven and bake at 200°C (top/bottom heat) for about 1 hour on the middle rack. The non-stick spray allows you to easily turn the bread out onto the oven rack about 10 minutes before the end of the baking time to crisp up the underside. This also works without carrots and nuts; it can be used to make rolls without carrots and nuts, or for a party with fried onions without carrots and nuts to make a great baguette.
