Ingredients for 1 servings:

  • 450 ml water, boiling
  • 250 g wholemeal spelt flour
  • 250 g whole wheat flour
  • 80 g sunflower seeds
  • 50 g flaxseed
  • 1 tbsp honey
  • 1 tsp salt
  • 1 tbsp cane sugar
  • 1 cube of yeast

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes

Spelt and wheat wholemeal bread with sunflower seeds and linseed

Add the flaxseed to the boiling water and let it swell until the water is lukewarm. Then stir together 2 tablespoons of the flour, the yeast, the water, and the flaxseed. Cover and let this pre-dough rise in a warm place for about 15 minutes. In the meantime, put the flour, sunflower seeds, honey, salt, and cane sugar in a bowl. Add the pre-dough and knead everything into a smooth dough. Place the dough in a baking dish, cover, and let it rise in a warm place for 45-60 minutes. Bake for 50-60 minutes at 180°C (fan oven). If you prefer a darker crust, you can increase the temperature accordingly. Tip: Place a cup of water on the bottom of the oven.
