Spelt cheese crackers

Ingredients for 1 servings:

  • 600 g spelt flour (wholemeal)
  • 300 ml water, lukewarm
  • 140 g mountain cheese or Emmental
  • Salt
  • 2 tsp bread spice mix
  • 2 tsp pumpkin seeds, ground

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

Using a food processor (dough hook) or by hand, combine flour, water, salt, bread spice, and pumpkin seeds to form a smooth dough. Let it rest for half an hour. Roll out the dough very thinly on a sheet of baking paper (I always use a pasta machine) and place it on a baking sheet. Sprinkle with grated cheese, cut into small squares, and bake at 180°C. Let cool briefly and then tear the squares into pieces. My kids love these crackers. I don’t have to feel guilty about them snacking on them as a snack.
