Spelt flour plum cake from the tray

Ingredients for 1 servings:

  • 8 tbsp oil
  • 8 tbsp whole milk
  • 8 tbsp sugar, possibly fructose, max. 100g
  • 250 g quark
  • 1 egg(s)
  • 1 pinch of salt
  • 400 g spelt flour, optionally half wholemeal flour
  • 1 ½ packets of baking powder
  • 1 kg pitted plums, preferably sweet
  • Cinnamon powder to taste
  • 100 g butter, melted
  • 100 g sugar, possibly fructose
  • 2 egg yolks
  • 1 packet of vanilla sugar
  • 200 g flour

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 20 minutes

Mix the top 6 ingredients with a mixer and add the flour mixed with baking powder. Knead everything into a ball and place on a greased baking sheet. Spread the dough out with your hands on the baking sheet, flatten it evenly, and pull up a small edge if possible. Lightly flour your hands if the dough sticks! Prick the dough with a fork. Place the plums, stone-side up, on the dough and sprinkle with cinnamon. Preheat the oven to 180°C and bake the cake for about 20 minutes (if the cake is not to be topped with crumble, bake for a total of about 45 minutes). In the meantime, prepare the optional crumble topping: Heat the butter and sugar in a saucepan until melted, stir well several times, and let cool slightly. Put the egg yolks and flour in a mixing bowl and stir briefly with a mixer. Add the butter and sugar mixture (and vanilla sugar, if desired) and mix with a mixer until a crumbly batter forms. After about 20 minutes of baking, spread the crumble topping over the plums and then bake for another 30 minutes. If necessary (in good time!), cover the cake with aluminum foil if the crumble topping is getting too brown.
