Spelt potato flour burger buns

Ingredients for 8 servings:

  • 400 g spelt flour
  • 100 g potato flour
  • 200 ml water
  • 2 eggs
  • 2 tbsp spice mix (chimichurri spice), alternatively pizza spice
  • ½ tsp salt
  • 1 pack of yeast
  • 80 g butter, soft
  • 40 ml milk
  • 1 tsp, levelled sugar
  • 1 small onion(s)
  • 1 tbsp, heaped sesame seeds
  • 2 tbsp milk for brushing

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour 20 minutes; Cooking/baking time approx. 18 minutes; Total time approx. 1 hour 53 minutes

First, mix the yeast, flour, sugar, chimichurri seasoning, 1 egg, and salt. Finely dice the onion and mix in. Add the lukewarm milk, lukewarm water, and softened butter and knead everything into a smooth dough. Cover with a damp cloth and let rise in a warm place for 1 hour. Then divide into 8 portions, shape into buns, and place on a baking sheet lined with baking paper. Cover with a damp cloth and let rise for another 20 to 30 minutes. Preheat the oven to 200 degrees Celsius (top and bottom heat). Now mix the second egg with 2 tablespoons of milk and brush the buns with it, then sprinkle with sesame seeds. Bake on the middle rack for about 18 minutes.
