Spelt rolls with carrots and oat flakes

Ingredients for 1 servings:

  • 2 dl oat flakes
  • 4 dl water
  • 50 g butter or vegan margarine
  • 3 ½ dl water
  • 50 g yeast
  • 3 tsp salt
  • 2 tbsp sugar or sugar substitute of your choice
  • 350 g carrot(s), grated
  • 1,100 g spelt flour, possibly 1/2 wholemeal

Instructions

Working time approx. 15 minutes; Rest time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 50 minutes

Make porridge from the oats and 2 dl of water. Melt the butter in the porridge. Pour the mixture into a bowl and add the remaining water until the mixture is lukewarm. Dissolve the yeast in it and add the salt, sugar, grated carrots, and raisins, if desired. Now add the flour—maybe not all of it—and stir well, either by hand or in a mixer. The dough should be moist and sticky. Let it rise in a warm place for at least 20 minutes. Meanwhile, preheat the oven to 225°C (top/bottom heat). Place the dough (preferably loosely shaped) on the baking paper and bake for about 15 minutes. For larger rolls, add a few more minutes, about 18–20 minutes, until they get a little brown. The rolls will rise quite a bit during baking. Best enjoyed warm.
