Ingredients for 4 servings:

  • 1 apple
  • 250 g feta cheese
  • 1 bunch of spring onions
  • 1 bell pepper(s)
  • 3 slices of cooked ham
  • 1 tsp salt
  • 1 cup spelt like rice
  • 150 ml mayonnaise
  • 165 g corn

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

First, cook the spelt as directed on the package, then let it cool. I always use one cup of spelt to two cups of water and one teaspoon of salt. While the spelt is cooking, finely dice the apple, bell pepper, feta, and cooked ham. Slice the spring onion into rings. Place everything in a bowl along with the corn. Add the mayonnaise and mix.
