Ingredients for 1 servings:

  • 1 kg spelt flour
  • 200 g wheat bran
  • 100 g oat flakes
  • 1 cube of fresh yeast
  • 1 tsp honey
  • 3 tbsp vinegar
  • 700 ml water, lukewarm
  • 200 ml buttermilk, lukewarm
  • 20 g salt

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 1 hour 10 minutes; Total time approx. 2 hours 30 minutes

In a separate cup, stir the yeast with a teaspoon of honey until smooth and set aside. Combine the spelt flour, cracked wheat flour, rolled oats, and salt in a large bowl and mix well. Add the vinegar, pour in the water and buttermilk, and immediately stir in the yeast mixture. Let it rise for 30 minutes. Shape the dough into a loaf and bake in the oven at 180 degrees Celsius (convection oven) on a medium setting for 70 minutes. It’s best to place a small bowl of water in the oven. After 15 minutes of baking, cut a hole and brush with warm water.
