Spelt with tomatoes and feta cheese

Ingredients for 4 servings:

  • 200 g spelt (health food store or organic food store)
  • 400 ml water
  • 1 onion(s)
  • ½ bunch thyme, fresh (alternatively 1 tsp dried)
  • 500 g tomatoes
  • 1 tbsp olive oil
  • Salt
  • 200 g sheep’s cheese
  • 1 tbsp cream
  • Cayenne pepper

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 1 hour 10 minutes; Total time approx. 2 hours 40 minutes

Bring the spelt to a boil with 400 ml of water, cover, and simmer over low heat for about 1 hour. Turn off the stove and let it swell for another 1 hour. Peel and finely chop the onion. Wash the thyme and strip the leaves from the stalks. Blanch the tomatoes in boiling water, rinse with cold water, and peel them. Then cut the stalks into small cubes. Heat the oil in a saucepan. Sauté the onion and thyme over medium heat. Add the spelt. Stir in the tomatoes and season with salt and cayenne pepper. Simmer uncovered over medium heat for 10 minutes. Meanwhile, crumble the cheese. Mix the cream into the spelt, sprinkle with the feta cheese, and serve.
