Spice Cake Runkel Cookies Dough:
- 200 g Rye flour type 1150
- 100 g Wheat flour type 550
- 1 tsp Soda bicarbonate
- 2 tbsp Honey
- 4 tbsp Refined sugar
- 2 tbsp Honey cake spice mixture see m. KB
- 1 tbsp Sunflower seeds
- 1 tbsp Simple jam
- 1 tbsp Cocoa powder slightly de-oiled
- 1 Msp Salt
- 0,1 l Coffee (drink) cold
- 2 piece Free range eggs
- 50 g Butter
Release agent for kneading and rolling:
- 10 g Flour
- 2 El Oil
Knead dough:
- Finely sift the flour, cocoa powder, sugar, salt and bicarbonate in a bowl, form a well and add the two fresh eggs, add the clarified butter with the honey, and mix the remaining dough ingredients with the cold coffee. Form a firm, dark, sticky ball of dough with a little oil in the bowl and roll, let everything rest 3x for 5 minutes, cut into pieces and then knead. Of course, you can also let the dough soak for longer.
Roll out the dough and portion:
- Roll out the dough on a suitable oiled surface and cut the dough pieces into strips. You can now twist each piece of dough a few times so that the bar shape or cone shape results.
Baking time:
- 10 – 15 minutes at 180 ° C, may vary slightly depending on the thickness of the dough. Sprinkle with powdered sugar after baking.
